Banana flitters/Kolar malpoa

Indian cuisine is enriched with different types of dessert and West Bengal is famous for its fish and sweet recipes. "Malpoa" is one of them which belongs to West Bengal cuisine. It is generally made with flour and sugar and deep-fried into oil, served with "rabri" (sweet evaporated milk). On the other hand "kolar bora" which is basically sweet deep-fried banana balls also a delicious dessert served by Indian cuisine. But here, I made a fusion in between these two different recopies to create my own unique signature. Yes! here I am going to introduce you with "Banana Flitters" also you can called it "Kolar Malpoa". I made it using ripe bananas following similar recipe of malpoa.

These desserts are favorite item at my home. But this time I have a story behind this unique creation. I generally buy lot of bananas from grocery stores and always promise myself that "this time I should follow a healthy, balanced diet plan to reduce some extra weight". But unfortunately every time I loose my goal, as images of delicious foods started to come in my mind in the name of "cravings" and my bananas are neglected from being eaten. As a result, most of the time I prepared "Kolar bora" (deep-fried banana balls). Though it very delicious but frequent presence makes it less attractive. Honestly, I also loose interest to eat them up.

Last time, the story was almost same, but I like to make something different this time and like to change the usual "banana story". So, I jumped into kitchen, smashed those ripe bananas, mixed it with all purpose flour, semolina, whole milk, sugar, green cardamom powder and fennel seeds and prepared a semiliquid mixture. Then, I waited for 30 minutes, heated the oil in a pan and deep fried the flitters on a medium-low heat, until color turns brown. I served those flitters and no one understand that those was made by bananas, so delicious. Banana Flitters/Kolar Malpoa is an excellent choice of dessert for everyone , even banana haters will love it.
